Vegetarian Lasagne Snack Squares are a flexible way to serve pasta, veg and cheese in one tidy little piece.

Bake a family-sized dish, let it set, then cut into squares that reheat beautifully from chilled or frozen for quick snacks or simple meals.

Method

  1. Preheat the oven to 180°C.
  2. Heat the olive oil in a pan and gently cook the onion, garlic, carrot and courgette until soft.
  3. Pour in the passata, season lightly and simmer for 10–15 minutes to thicken slightly.
  4. In a separate bowl, mix the ricotta or cottage cheese with the spinach.
  5. Spread a thin layer of tomato sauce in a baking dish, then add a layer of lasagne sheets.
  6. Top with some of the ricotta-spinach mixture and more sauce. Repeat the layers, finishing with sauce and a sprinkle of grated cheese.
  7. Cover with foil and bake for 25–30 minutes, then uncover and bake for a further 10 minutes until bubbling and golden.
  8. Allow the lasagne to cool and set before cutting into squares.
