Tomato and Chorizo Risotto Bites start as a simple tomato risotto, then get baked into little balls with crispy edges and a soft centre.

They’re a fun way to serve risotto to children and they reheat well from frozen, making them a great make-ahead snack or lunch.

Method

  1. Heat the olive oil in a pan and gently cook the onion until soft. Add the garlic and chorizo and cook for a few more minutes.
  2. Stir in the risotto rice and cook for a minute until lightly coated in the oil.
  3. Add the passata and a ladleful of stock, stirring until absorbed. Continue adding stock a little at a time, stirring, until the rice is tender and creamy.
  4. Season lightly and stir in the grated cheese if using. Allow the risotto to cool until it is firm enough to handle.
  5. Preheat the oven to 190°C and line a baking tray with parchment.
  6. Shape spoonfuls of the cooled risotto into balls and place on the tray. Bake for 15–20 minutes until firm and lightly crisp on the outside.
