This Mild Thai Green Curry Soup is a very gentle version of the classic, with plenty of vegetables and a creamy coconut base.

Portioning it into small pots makes it easy to freeze and reheat for quick, warming snacks or light meals for children.

Method

  1. Gently cook the onion in a little oil until softened, then add the garlic and curry paste and cook for a minute until fragrant.
  2. Pour in the coconut milk and stock, stirring to combine.
  3. Add the sliced courgette, pepper and green beans or peas. Simmer gently until the vegetables are tender.
  4. Stir in the cooked chicken if using and heat through.
  5. Taste and add a splash of soy sauce or tamari and a little lime juice if needed, keeping flavours mild for children.
  6. Cool slightly before portioning into small soup pots to cool completely and then chill or freeze.
